Donna, the chocolatier, is extremely well versed in the principles of nutrition and its effects on health, well being, and ageing. She knows that treats are often a necessity in this hectic world and tries whenever possible to "sneak" in a bit of nutrition into our products. Donna is concerned about chemicals and other adulterants in foods, especially in conventional “diabetic safe” products. She does all her baking fresh from scratch, using no pre-made mixes. Her concern with the healthfulness of food leads her to keep a large organic garden and greenhouse and to naturally raise free range chickens for their eggs. Donna is the stereotypical "earth mother", except for her degree in electrical engineering from M.I.T. Arlene has a Ph.D. in molecular biology. It was her positive experience with the Atkin's Diet that led her to learn about truly low carb ingredients and to appreciate the importance of the glycemic index for weight loss and health. Her appreciation for the hopes and concerns of people with diabetes is born of being nearly the only one in her family that isn't a diabetic. Besides being chief taste tester (great job to have!), Arlene manages the website. The cottage really exists and is one of the most relaxing places on Earth.
